Ingredients
1 | scoop BN Pure Pro |
1 | egg white |
¾ | cup almond meal |
¼ | cup dried dates |
1 ½ | tbsp coconut oil, melted |
1 ½ | tbsp honey |
1 | tbsp ginger spice mix (or 1 tsp cinnamon, ginger & nutmeg) |
1 | tsp baking powder |

Method

Step 1
Preheat oven to 150°C

Step 2
Add BN Pure Pro, almond meal, dates, baking powder and gingerbread spice mix to a blender. Blend well.

Step 3
When the mixture is solid, add egg white, coconut oil and honey to the blender. Blend until a delicate dough is formed.

Step 4
Place the rolled dough into the freezer for 20 minutes or into the fridge for 2 hours.

Step 5
Cut the cookie shapes from the dough. Put them on a baking sheet lined with baking paper. Bake for 10-15 minutes.
- During baking, be careful not to burn them. If they have already started to turn brown, remove them out of the oven.
